My Granny's Gaspacho Soup

So the sun has been beating it down in Dublin and I couldn't think of anything more refreshing than some gaspacho soup. My Granny taught me how to make this when I was a kid and I have been making it ever since and we all love it in my house! I know some of you might not like the idea of cold tomato soup, but honestly don't knock it till you've tried it!! :-)

For the soup
1/2 small onion chopped
1/3 cucumber chopped
1 red pepper chopped
1 slice of bread -  soaked in water & squeezed
2 tblsp olive oil
squeeze of lemon juice
1 litre tomato juice

1-2 tblsp white wine vinegar to taste
salt and pepper

Method
This is the easiest thing to put together in just a few minutes.

Whizz the above ingredients in a blender with just half the tomato juice (so your blender doesn't explode!) until all large bits are broken down.

Pour the soup into a large serving bowl and add the rest of the tomato juice.

Add the white wine vinegar and salt and pepper to taste.

To serve
For the croutons:
Cut some white bread into cubes and fry on the pan with a little oil and garlic and put in a small bowl.

Chop the following & put into individual ramekins:
Onion
Red pepper
Cucumber

Finally, add some cubes of ice to your soup to keep it chilled and away you go! Allow your guests to add the little bits as they please!
