8 good quality sausages
2 red onions, cut into wedges
250g cherry tomatoes, halved or 12 plum tomatoes cut into quarters
4 garlic cloves, finely chopped
3 tbsp balsamic vinegar
2 tbsp olive oil
1 tbsp honey
2 tbsp rosemary, finely chopped
handful torn fresh basil leaves
salt & freshly ground black pepper
For the mash:
900g floury potatoes, peeled & cut into chunks
4 tbsp milk
good pinch of salt
Preheat the oven to 200C.
Place the sausages, onions, garlic, basil and cherry tomatoes in a roasting tray or dish. Drizzle over the olive oil, balsamic and honey and sprinkle in the chopped rosemary. Season well with salt and pepper. Gently toss to combine.
Place in the oven and cook for 25 minutes or more, turning the sausages half way through, until the sausages are cooked and nice and golden.
Meanwhile, cook the potatoes in a pot of salted boiling water until tender. This should take approximately 20-25 minutes depending on the size of the chunks. Drain off the water and mash with the butter and milk. Taste and season with salt if needed.
Remove the sausages from the oven and serve with a good dollop of your lovely creamy mash! Mmmm... my mouth is watering at the thought of these... sooo yummy!
