Roasted Beetroot, Orange and Feta Salad

Beetroot is another one of the lovely vegetables in season right now. They are very versatile and are delicious in this salad. I was reading up a bit about beetroots and found a few interesting things that I wanted to share with you!!

1. In many cultures the belief continues, that if a man and a woman eat the same beetroot they will fall in love!! ;-p

2. If you boil beetroots in water and massage the leftover water into your scalp every evening, it is a cure for dandruff!! haha!

Thought these might make you laugh!! Anyway back to the cooking!!

Prep: 20mins Cook: 30mins Serves: 2

Ingredients
2 fresh beets, peeled and cut into chunks
(use pre-cooked if fresh unavailable)
1 orange, segmented
1/3 block of feta cheese
4 tbsp pine nuts, toasted
3-4 handfuls washed salad leaves
For the dressing:
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp honey
Salt & pepper

Method
Preheat the oven to 200C.

Mix the ingredients for the dressing in a small jar or cup. Toss the beetroot in half the dressing and roast in the oven for 25-30mins depending on the size. They should be fork tender when cooked.

Put the pine nuts on a baking tray and put in the oven for 2-3 mins to toast. Keep watch as they can burn very quickly. Remove from the oven as soon as they are lightly toasted.

Toss the salad leaves in the remaining dressing and place in a serving bowl. Segment the orange and neatly scatter around the bowl. Crumble the feta on top and sprinkle the toasted pine nuts over.

Remove the beetroot from the oven and finally add this to your salad before serving.
