The summer is here and this means there's plenty of time to drink lemonade in the sunshine! You can use the basic stock syrup without the ginger infusion to make any lemonade concoction you want, then just add still or sparkling water to your taste.

Serves: 6

Ingredients for Ginger Stock Syrup
300 ml water
200g castor sugar
thumb size piece of ginger, no need to peel, just thinly slice

Ingredients for Lime and Ginger Lemonade:
juice of 3 lemons
juice of 3 limes
450ml stock syrup
1.2litres ginger ale
handful of mint leaves

Ice to serve

The Method

To make the stock syrup, place the sugar, water and sliced ginger in a saucepan and gently bring to the boil. Stir gently with a spoon until all the sugar has dissolved. Remove from the heat and allow to cool.

To make the lemonade, add the ginger ale, mint, lemon and lime juice to the stock syrup. Still well and serve well chilled with lots of ice and slices of lemon and lime.
