450g plain flour
1 rounded tsp salt
1tsp bread soda
75g cheddar cheese
small handful chopped chives
450ml buttermilk

Preheat your oven to 180 conventional or 160C Fan.

Grease a loaf tin well with some sunflower oil to prevent the bread from sticking.

Place all the dry ingredients including the cheese and chives into a large bowl and mix well together with your hands.

Make a well in the centre, pour in the buttermilk and mix thoroughly to combine.

Scoop into the bread tin, even out as best you can and then sprinkle the top with some plain flour.

Score the top of the bread with a floured knife, about an inch and a half deep lengthways.

Place on the middle shelf in the oven for approximately 1 hour and 20 minutes. To check if the bread is done, remove from the oven and give the bottom of the bread a good bang. If it sounds hollow, its done! This bread is irresistible to eat while still hot from the oven..mmmm!  :-)
