SMOKED MACKEREL PATÉ & CRAB SALAD TOASTS

Mackerel is a lovely fish but can often require significant time to prepare due to the number of bones. Luckily for me Wrights of Howth sell lovely little packets of frozen smoked mackerel fillets, which are de-boned and ready to use.

The crab salad is a recreation of a starter my mum often makes when the sun is shining. It has a lovely citrusy, fresh flavour, perfect with a nice glass of chilled white wine!

I recently served both of the above on melba toast and they went down a treat.


SERVES: 6 - 8


SMOKED MACKEREL PATÉ

INGREDIENTS:
200g smoked mackerel fillets
150g créme fraiche
2 spring onions, finely sliced
small handful of parsley, roughly chopped
juice of 1 lemon
freshly ground black pepper

TO SERVE:
Melba toast, Pittas or some nice crusty bread

METHOD:
1. For the paté, first remove the skin from the mackerel fillets.  Using a long sharp knife, release a small bit of the skin from the tail end of the fish. (A filleting or boning knife is best if you have one.)

2. Hold the tail firmly with one hand, and slowly glide the knife, at a slight angle, from the tail end to the tip of the fillet, removing as much flesh from the skin as possible. The skin sometimes comes away really easily when the fish has been smoked, so you may even be able to peel it away with your fingers. 

3.  Break up the fillets into smallish pieces and place in a food processor with the rest of the ingredients.

4. Whizz together until smooth.

CRAB SALAD

INGREDIENTS: 
250g crab meat
50g créme fraiche
juice & zest of 1 lemon
2 spring onions, finely sliced
handful flat leaf parsley, finely chopped
salt & freshly ground black pepper

METHOD:
1. Combine all the ingredients together in a bowl.
2. Taste and season with salt and freshly ground black pepper. 
3. Serve on some melba toast or even on a bed of fresh mixed leaves,
